Wine making: The grapes which are hand cut, are vinified with a temperature-controlled fermentation. They undergo a long maceration period so the silky, sublime tannins, colour and aromas can be developed.
They age this robust, limited edition wine in steel barrels for 12 months so the flavour can develop. The black label Il Vescovo is then placed in our cellar where it is left to mature for a further 7 years in the bottle.
Tasting Notes: The fruity and intoxicating blend of Malbec with the spicy and persistent notes of Cabernet Sauvignon, give life to a blend of flavours and aromas that are complex, elegant, rich and full-bodied. The addition of the Carménère to this blend, adds a granite-like minerality with a smokey, spicy berry, earthy aroma.
